A flavorful Indian-inspired dish with homemade paratha bread

Ingredients

  • onion :1 piece
  • tomato puree :0.5 tbsp
  • neutral oil :12.5 ml
  • garlic cloves :2.5 cloves
  • sambal oeleck :1.25 tbsp
  • makrut lime leaves :2 leaves
  • fine sea salt :0.75 tsp
  • potatoes :125 g
  • chickpeas :200 g
  • coconut milk :100 ml
  • puff pastry dough :125 g

Steps

  1. Make the curry paste by blending onion, tomato puree, oil, garlic, sambal oeleck and lime leaves.
  2. Scrape the paste into a large saucepan and cook on medium heat for 10-12 minutes.
  3. Stir in salt, chickpeas and their water, potatoes and coconut milk. Bring to a boil and simmer for 20 minutes.
  4. Make the paratha by rolling out puff pastry dough into a round shape.
  5. Cook the paratha in a nonstick frying pan for a minute and a half on each side.
