A flavorful Indian-inspired dish with homemade paratha bread
Ingredients

- onion :1 piece
- tomato puree :0.5 tbsp
- neutral oil :12.5 ml
- garlic cloves :2.5 cloves
- sambal oeleck :1.25 tbsp
- makrut lime leaves :2 leaves
- fine sea salt :0.75 tsp
- potatoes :125 g
- chickpeas :200 g
- coconut milk :100 ml
- puff pastry dough :125 g
Steps
- Make the curry paste by blending onion, tomato puree, oil, garlic, sambal oeleck and lime leaves.
- Scrape the paste into a large saucepan and cook on medium heat for 10-12 minutes.
- Stir in salt, chickpeas and their water, potatoes and coconut milk. Bring to a boil and simmer for 20 minutes.
- Make the paratha by rolling out puff pastry dough into a round shape.
- Cook the paratha in a nonstick frying pan for a minute and a half on each side.
