Chickpea and potato curry with quick paratha

A flavorful Indian-inspired dish with homemade paratha bread
Ingredients
- onion - 1 piece
- tomato puree - 0.5 tbsp
- neutral oil - 12.5 ml
- garlic cloves - 2.5 cloves
- sambal oeleck - 1.25 tbsp
- makrut lime leaves - 2 leaves
- fine sea salt - 0.75 tsp
- potatoes - 125 g
- chickpeas - 200 g
- coconut milk - 100 ml
- puff pastry dough - 125 g
Steps
- Make the curry paste by blending onion, tomato puree, oil, garlic, sambal oeleck and lime leaves.
- Scrape the paste into a large saucepan and cook on medium heat for 10-12 minutes.
- Stir in salt, chickpeas and their water, potatoes and coconut milk. Bring to a boil and simmer for 20 minutes.
- Make the paratha by rolling out puff pastry dough into a round shape.
- Cook the paratha in a nonstick frying pan for a minute and a half on each side.
