Chickpea and potato curry with quick paratha

A flavorful Indian-inspired dish with homemade paratha bread

Ingredients

  • onion - 1 piece
  • tomato puree - 0.5 tbsp
  • neutral oil - 12.5 ml
  • garlic cloves - 2.5 cloves
  • sambal oeleck - 1.25 tbsp
  • makrut lime leaves - 2 leaves
  • fine sea salt - 0.75 tsp
  • potatoes - 125 g
  • chickpeas - 200 g
  • coconut milk - 100 ml
  • puff pastry dough - 125 g

Steps

  1. Make the curry paste by blending onion, tomato puree, oil, garlic, sambal oeleck and lime leaves.
  2. Scrape the paste into a large saucepan and cook on medium heat for 10-12 minutes.
  3. Stir in salt, chickpeas and their water, potatoes and coconut milk. Bring to a boil and simmer for 20 minutes.
  4. Make the paratha by rolling out puff pastry dough into a round shape.
  5. Cook the paratha in a nonstick frying pan for a minute and a half on each side.
