A flavorful and quick salad made with chickpeas, curry powder, and a mix of fresh ingredients, perfect for lunch or as a sandwich filling.
Ingredients
- Chickpeas - 1 can
- Vegan Mayo - 2 tbsp
- Curry Powder - 0.5 tsp
- Mango Chutney - 1 tbsp
- Salt - 0.125 tsp
- Celery - 0.5 rib
- Green Onion - 0.5
- Raisins - 2 tbsp
- Chopped Cashews - 2 tbsp
- Chopped Fresh Cilantro - 1 tbsp
Steps
- In a large bowl, mash the chickpeas with a potato masher (or fork) until chunky and mostly mashed.
- Add all other ingredients to the bowl and mix until well combined.
- Serve either in between bread for sandwiches, in a wrap, on a green salad or with crackers. Enjoy!
