A delicious and flavorful cauliflower fried rice recipe that's packed with vegetables and spices.

Ingredients

  • Cauliflower - 1 cup
  • Carrot - 0.5 cup
  • Broccolini - 15 g
  • Red Onion - 0.25 cup
  • Garlic - 1 piece
  • Shimeji Mushrooms - 15 g
  • Soy Sauce - 0.5 tbsp
  • Dark Soy Sauce - 0.25 tsp
  • Toasted Sesame Oil - 0.25 splash
  • Hoisin Sauce - 0.5 tsp
  • Chili Oil - 1 tbsp
  • Hemp Hearts - 1 tbsp
  • Fresh Basil - 0.5 tbsp
  • Sesame Seeds - 0.5 tbsp

Steps

  1. Prep the cauliflower by slicing into the stem and pulling out the florets.
  2. Chop the florets down into bite-sized pieces.
  3. Rice the cauliflower by blending the florets in a blender on the lowest setting, a small handful at a time.
  4. Chop the carrot into cubes.
  5. Chop the broccolini and dice the red onion.
  6. Finely chop the garlic and roughly chop shimeji mushrooms.
  7. Make the sauce by combining soy sauce, dark soy sauce, toasted sesame oil, and hoisin sauce.
  8. Heat up a nonstick pan to medium heat.
  9. Add the chili oil.
  10. Sauté the onions and garlic for a couple of minutes.
  11. Add the broccolini and carrots and sauté for another couple of minutes.
  12. Add the mushrooms, riced cauliflower, hemp hearts, and the sauce.
  13. Sauté for 3-4min.
  14. Add the basil, turn off the heat, and give the pan a good stir.
  15. Plate the rice, top with sesame seeds and serve.
