Easy Chinese Fried Rice

A delicious and easy-to-make Chinese fried rice recipe using leftover ingredients.
Ingredients
- Chickpeas - 6.25 tbsp
- Garlic - 2
- Red Onion - 0.5
- Green Onion - 1
- Carrot - 6.25 tbsp
- Broccolini - 0.5 cup
- Cremini Mushrooms - 2
- Chili Oil - 4 tbsp
- Corn - 6.25 tbsp
- Rice - 15 cup (overnight)
- Soy Sauce - 4 tbsp
Steps
- Use a fork to roughly crush the chickpeas
- Roughly chop the garlic, dice the red onion, chop the green onion, dice some carrot, chop the broccolini, and slice the mushrooms
- Heat up a non stick pan to medium heat. Add the chili oil
- Add the garlic, red onions, green onions, and chickpeas. Sauté for about a minute
- Add the carrot, broccolini, and mushroom. Sauté for another minute
- Add the corn and rice followed by the soy sauce
- Sauté for another few minutes and you're done!
