Ingredients

  • quinoa - 1
  • mixed pre-cut vegetables (bell peppers, zucchini, cherry tomatoes) - 1
  • olive oil - 3 tbsp
  • tahini - 2 tbsp
  • lemon juice - 1 tbsp
  • garlic clove, minced (optional)

Steps

  1. Preheat a skillet over medium heat.
  2. Add olive oil and sauté the mixed vegetables until tender, about 5-7 minutes.
