A delicious and easy-to-make dish featuring whole-grain tortillas stuffed with sautéed spinach, mushrooms, and cheese, then grilled until golden brown.
Ingredients
- whole-grain tortillas - 2
- spinach - 1 cup
- sliced mushrooms - 0.5 cup
- shredded vegan cheese - 0.5 cup
- olive oil - 3 tbsp
- salsa or sour cream for serving
Steps
- Heat olive oil in a skillet over medium heat.
- Add spinach and mushrooms, sauté until softened, about 5 minutes.
- Place one tortilla in the skillet, sprinkle with cheese, add the sautéed veggies, and top with more cheese.
- Place the second tortilla on top, and cook for 2-3 minutes per side until golden brown and the cheese is melted.
- Slice into wedges and serve with salsa or sour cream.
