Spinach and Mushroom Quesadilla

A delicious and easy-to-make dish featuring whole-grain tortillas stuffed with sautéed spinach, mushrooms, and cheese, then grilled until golden brown.

Ingredients

  • whole-grain tortillas - 2
  • spinach - 1 cup
  • sliced mushrooms - 0.5 cup
  • shredded vegan cheese - 0.5 cup
  • olive oil - 3 tbsp
  • salsa or sour cream for serving

Steps

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and mushrooms, sauté until softened, about 5 minutes.
  3. Place one tortilla in the skillet, sprinkle with cheese, add the sautéed veggies, and top with more cheese.
  4. Place the second tortilla on top, and cook for 2-3 minutes per side until golden brown and the cheese is melted.
  5. Slice into wedges and serve with salsa or sour cream.
