A delicious and healthy mushroom soup recipe without using cream.
Ingredients
- Mushrooms - 225 g
- Dried Porcini mushrooms - 2.5 oz
- Potatoes - 1
- Leeks - 1
- Onions - 0.5
- Garlic cloves - 1.5
- Thyme sprigs - 3
- Chicken stock - 1.5 cups
- Butter - 0.75 tbsp
- Olive oil - 0.25 tbsp
- White wine - 0.125 cup
- Hot water - 1 cups
Steps
- Soak dried Porcini mushrooms in 2 cups of hot water.
- Fry mushrooms over medium heat, deglazing with white wine if desired.
- Sauté leeks, onions, potatoes, and garlic in butter until browned.
- Add porcini mushrooms, chicken stock, thyme, and cooked mushrooms to the pot.
- Simmer for 30 minutes, then blend soup until smooth.
- Serve with parmesan, parsley, and truffle oil or olive oil.
