A delicious and healthy mushroom soup recipe without using cream.

Ingredients

  • Mushrooms - 225 g
  • Dried Porcini mushrooms - 2.5 oz
  • Potatoes - 1
  • Leeks - 1
  • Onions - 0.5
  • Garlic cloves - 1.5
  • Thyme sprigs - 3
  • Chicken stock - 1.5 cups
  • Butter - 0.75 tbsp
  • Olive oil - 0.25 tbsp
  • White wine - 0.125 cup
  • Hot water - 1 cups

Steps

  1. Soak dried Porcini mushrooms in 2 cups of hot water.
  2. Fry mushrooms over medium heat, deglazing with white wine if desired.
  3. Sauté leeks, onions, potatoes, and garlic in butter until browned.
  4. Add porcini mushrooms, chicken stock, thyme, and cooked mushrooms to the pot.
  5. Simmer for 30 minutes, then blend soup until smooth.
  6. Serve with parmesan, parsley, and truffle oil or olive oil.
