A simple and healthy curry made with tofu and mixed vegetables.

Ingredients

  • firm tofu, cubed - 100 g
  • cauliflower florets - 0.5 cup
  • diced tomatoes - 0.25 cup
  • chopped bell pepper - 0.25 cup
  • light coconut milk - 0.125 cup
  • curry powder - 0.5 tbsp
  • olive oil - 0.25 tbsp

Steps

  1. Heat olive oil in a pan, add tofu, and sauté until golden.
  2. Add cauliflower, bell pepper, and diced tomatoes; cook for 5 minutes.
  3. Stir in curry powder and coconut milk, simmer for 10 minutes, and serve hot.
