  • Cauliflower :1 head
  • Breadcrumbs :75 g
  • Cornflour :1 tbsp
  • Plant based milk :2 tbsp
  • Salt :1 tsp
  • Black Pepper :0.5 tsp
  • Oil :60 ml
  • Potatoes :300 g
  • Cabbage :150 g
  • Carrot :1 medium
  • Vinegar :1 tbsp
  • Mustard :1 tbsp

Steps

  1. Preheat the oven to 200°C (high heat). Cut the cauliflower into thick slices.
  2. Dip each cauliflower slice first into the cornflour mixture, then milk, then coat with breadcrumbs.
  3. In a hot skillet, add oil and pan-fry the breaded cauliflower slices until golden.
  4. For fries, cut potatoes into batons, toss with salt, and bake until crisp.
  5. Make the slaw by shredding cabbage and carrot, mixing with vinegar and mustard.
  6. Serve the schnitzel with fries and slaw.
