- Cauliflower :1 head
- Breadcrumbs :75 g
- Cornflour :1 tbsp
- Plant based milk :2 tbsp
- Salt :1 tsp
- Black Pepper :0.5 tsp
- Oil :60 ml
- Potatoes :300 g
- Cabbage :150 g
- Carrot :1 medium
- Vinegar :1 tbsp
- Mustard :1 tbsp
Steps
- Preheat the oven to 200°C (high heat). Cut the cauliflower into thick slices.
- Dip each cauliflower slice first into the cornflour mixture, then milk, then coat with breadcrumbs.
- In a hot skillet, add oil and pan-fry the breaded cauliflower slices until golden.
- For fries, cut potatoes into batons, toss with salt, and bake until crisp.
- Make the slaw by shredding cabbage and carrot, mixing with vinegar and mustard.
- Serve the schnitzel with fries and slaw.
