Vegan Masala Fried Rice

A flavorful vegan fried rice recipe packed with spices and herbs.

Ingredients

  • red onion - 0.5
  • roma tomatoes - 2
  • long green chilies - 3
  • olive oil - 3 tbsp
  • salt - 2 pinches
  • curry leaves - 0.25 cup
  • chili powder (cayenne) - 0.5 tsp
  • sweet paprika - 1 tbsp
  • garam masala - 2 tsp
  • basmati rice - 3 cups
  • cilantro - 0.25
  • lime wedges - 2

Steps

  1. Dice the red onion and tomatoes.
  2. Chop the green chilies.
  3. Bring a non-stick pan to medium heat. Add the olive oil.
  4. Sauté the onions and chilies for about a minute.
  5. Add in the tomatoes followed by a couple pinches of salt. Sauté for a few minutes.
  6. Add in the curry leaves and sauté for 4-5min.
  7. Add in the chili powder, paprika, and garam masala (add a couple splashes of water if it looks too dry).
  8. Add in the rice and sauté for another couple of minutes.
  9. Garnish with freshly chopped cilantro and serve with a couple wedges of lime.
