Vegan Masala Fried Rice

A flavorful vegan fried rice recipe packed with spices and herbs.
Ingredients
- red onion - 0.5
- roma tomatoes - 2
- long green chilies - 3
- olive oil - 3 tbsp
- salt - 2 pinches
- curry leaves - 0.25 cup
- chili powder (cayenne) - 0.5 tsp
- sweet paprika - 1 tbsp
- garam masala - 2 tsp
- basmati rice - 3 cups
- cilantro - 0.25
- lime wedges - 2
Steps
- Dice the red onion and tomatoes.
- Chop the green chilies.
- Bring a non-stick pan to medium heat. Add the olive oil.
- Sauté the onions and chilies for about a minute.
- Add in the tomatoes followed by a couple pinches of salt. Sauté for a few minutes.
- Add in the curry leaves and sauté for 4-5min.
- Add in the chili powder, paprika, and garam masala (add a couple splashes of water if it looks too dry).
- Add in the rice and sauté for another couple of minutes.
- Garnish with freshly chopped cilantro and serve with a couple wedges of lime.
